Caroline Smyth talks about her new bakery.
We are opening a new coffee shop and bakery in Kings Heath this autumn/winter. It’ll be called the Early Bird Bakery, on the site of the former Aroma Bakery on Kings Heath High St. We want to differentiate ourselves from the many coffee shops and cake shops in the area so our business priorities are focused around social conscious and supporting people to grow within the hospitality sector. We want to be able to support their ideas and skills by allowing use of our kitchen and equipment to build their own business.
Our team is all local Birmingham-born residents and consists of Tim Coward – a pastry chef with over ten years’ experience of working in five star hotels and Michelin
All three have a passion for food and for supporting new independent businesses. Part of our philosophy is to bake and serve everything on the same day using only the best, and wherever possible, locally sourced ingredients. Our attention to detail will extend to all our offerings with our coffee roasted locally by aficionados Hundred House Coffee.
An opportunity that we have seen from our research of Birmingham is that there is a demand for ethically fair-traded ingredients and vegan and allergy alternatives. This is something we have taken into consideration when planning the food we will be serving. The café is largely focused around cakes and pastries, however we are also going to be listening to what our customers want, as well as shaping our offering around the talents of the chefs we employ.
