Sizzling line up for UK Game Fair

Food event to showcase taste of the country.

Acclaimed game chef and food writer Tim Maddams, best known for his work on Channel 4’s River Cottage, heads a mouthwatering line-up in the Artisan Food Area at this summer’s UK Game Fair at Stoneleigh, from July 22nd-24th.

Tim will be joined at the show by Rayeesa, owner of cookery school, Rayeesa’s Indian Kitchen, and José Suoto, senior lecturer at London’s internationally-respected Westminster Kingsway College. José is also a demonstrator chef for the British Association for Shooting and Conservation’s Taste of Game campaign. The trio will all show visitors how to prepare simple but delicious meals using game and fish. More big names are to be announced.

Rayeesha said: “There’s no point in having a freezer full of game if you don’t know how to cook it. You want to be able to use what you’ve got and have dinner parties, because cooking game is a great way for communities to get together.”

Tim said: “The main thing for me is engaging with an audience about wild and self-harvested food. If we can change just one person’s mind about something then that would be my job done.”

Peter Gott of Sillfield Farm Foods will compère the Artisan Food Area of the UK Game Fair and hold cooking demonstrations using different game and wild boar. Peter is famed for his promotion of quality food and food production in the media, having been involved with programmes such as Rick Stein’s Food Heroes, Clarissa and the Countryman, Jimmy’s Farm, Jamie’s Kitchen and Kill It, Cook It, Eat It.

He said: “I want to offer demonstrations on how to cook game. You need to dispatch it humanely, then we’ll show you how to pluck it or skin it, cook it properly and enjoy it on a table. Game meat is the closest thing to God you will ever get – it’s all natural. The animal has eaten what it’s wanted to eat, there have been no additives or tampering in the food chain.”

Wes Stanton, organiser of the UK Game Fair, said: “We’re so excited about the Artisan Food Area at the UK Game Fair, and delighted to have many of the UK’s biggest game experts on hand to show visitors how to prepare, cook and eat some amazing food.”

Other attractions at the UK Game Fair will include a Focus on Fishing area, Gun Quarter and working dog demonstrations. There will also be the chance to go off-roading in a 4X4 on a purpose-built track.
